Sattu Paratha: A Taste of Tradition, a Bite of Health

Sattu paratha is a delicious and healthy flatbread originating from the Bihar region of India. It’s made with a dough of whole wheat flour and stuffed with a savory mixture of sattu (roasted gram flour), spices, and herbs.

Sattu is a powerhouse of nutrients, packed with protein, fiber, vitamins, and minerals. It’s a popular choice for breakfast, lunch, or dinner, and can be enjoyed with various accompaniments like chutney, pickle, or yogurt.

Here’s a quick overview of the recipe:

For the dough:
  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ajwain (caraway seeds)
  • 1/2 teaspoon kalonji (nigella seeds)
  • 1 tablespoon ghee or oil
  • Water (as needed)
For the filling:
  • 1 cup sattu
  • 1/2 teaspoon ajwain (caraway seeds)
  • 1/2 teaspoon salt
  • 1 teaspoon ginger-garlic paste
  • 1 green chili, finely chopped (adjust according to your preference)
  • 1/2 teaspoon red chili powder
  • 1/2 onion, finely chopped
  • 1/2 teaspoon lemon juice
  • 1 teaspoon pickle masala (optional)
  • 1 tablespoon chopped coriander leaves
  1. Make the dough: Combine the whole wheat flour, salt, ajwain, and kalonji in a bowl. Add ghee or oil and mix well. Gradually add water and knead into a soft dough. Cover the dough with a damp cloth and set aside for 30 minutes.
  2. Prepare the filling: In a bowl, combine sattu, ajwain, salt, ginger-garlic paste, green chili, red chili powder, onion, lemon juice, pickle masala (if using), and coriander leaves. Mix well and adjust the seasonings to your taste.
  3. Assemble the parathas: Divide the dough into equal portions. Roll out each portion into a circle. Place a spoonful of the filling in the center of the circle. Gather the edges of the dough and pinch them together to seal the filling.
  4. Cook the parathas: Heat a griddle or tawa over medium heat. Brush the paratha with ghee or oil and place it on the griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve: Enjoy the sattu parathas hot with chutney, pickle, or yogurt.
